Pitaya Smoothie!

Although I much prefer Dragon Fruit with the white flesh, the color that comes from Pitaya aka Red Dragon Fruit is too good to be true. I consider the color to be magenta, not red.

Recipe :
1 Pitaya fruit
1 cup kale
1/2 - 1 cup frozen Mangoes
Almond Milk. Use your judgement and use as much as you are happy with.

Raw Zucchini Pasta with Garlic Tomatoe Sauce by This Rawsome Vegan Life

This recipe is from the raw food blog, This Rawsome Vegan Life. I love this girl's blog. Emily Von Euw is also the author of Rawsome Vegan Baking100 Best Juices, Smoothies, and Healthy Snacks; and on December 8th, she'll be releasing The Rawsome Vegan Cookbook. I  can't wait!

Now on to the recipe.

The Noodles:
3 spirilized zucchini.

The Sauce:
2 tomatoes
juice from 1/2 a lemon
1/2 an onion
1 garlic clove
2 dates
2 red bell peppers
1/4 cup walnuts

Blend!

Sometimes I'll add 1 jalapeño de-seeded.

The dish is topped with cut tomatoes,  cilantro,  and avocado.

I'm pretty sure mangoes love me

My mango stash is ripening fast, so down the hatch! Mangoes are a staple for me, so I buy a lot each week. Tonight I made a mono-meal of 5 huge Keitt Mangoes. So smooth that they practically melt in your mouth.

If I don't want to mono-meal mangoes I may add some cucumber,  cherry or grape tomatoes,  and drizzle lime on top . This is one of my favorite meals.

Depending on the size, one mango is 100 calories or a bit over. For the most part I know how many calories are in the fruits and vegetables I consume which makes calculations easier.

On the 80/10/10 low fat, high carb, raw vegan diet  (that's a mouth full,  and very eye roll worthy), I typically consume anywhere between 1500 - 2000 a day, depending on how active I am.  The more ballet, swing dancing, and dance cardio, I do on any given day,  the more I need to eat. Fruit is fuel.

Strawberry Kombucha Smoothie by Julie Morris

I put my drink in a flower pot. . la la la. . .la la la. This is the closest I get to drinking alcohol. Should I feel like a big girl when I crack open a bottle of the booch? This here is, Strawberry Kombucha Smoothie. I need to add some exclamation marks here, gimme a second.. ! ! ! ! There, I feel better. SO good!

2 cups Original flavor GT Kombucha
2 cups Frozen Strawberries
2 tsp Maqui Berry Powder.

Recipe yields two 14oz servings.

You can use any brand of original flavor kombucha that you desire, however, GT is the only brand I drink .

This recipe was created by the talented Julie Morris of Superfood Smoothies.

Whipped Vanilla Dream Cupcakes by Sweetapolita

Oh glory be. Blogger Sweetapolita has served up a nice plate of pretty.

What I adore about these cupcakes is that the frosting is a winter mint green! She describes them as a pale turquoise but I beg to differ. Most likely, because winter mint is my favorite color.
