coconut mango ice cream cupcakes



Recipe is from Kandeland.

This recipe is not from scratch- it's fast and easy.

-Make cupcakes with Pillsbury Pineapple cake mix as directed on the box.

- When ready to serve, slice the top off and add a layer of heated up triple fruit jam to the bottom part of cupcake. Try Apricot-Peach-Passion Fruit jam, or something similar. If you wish cup up pieces of peach and place inside.

- Spread cream cheese frosting on top of the cupcake and put back together.

-Top with toasted coconut.

-Serve with a side of Coconut Mango ice cream, or something similar.
